Molasses notes are dark, sticky, and intense: treacle, dark rum, raw muscovado sugar. This is a rich, heavy sweetness with a slight bitterness that keeps it from being cloying. It works beautifully in very dark chocolate where it provides sweetness without refinement.

What Causes It

Extended fermentation and processing can develop deep brown sugar compounds including molasses-adjacent caramel molecules. This note often appears in beans that have been heavily fermented or in origins where post-harvest practices encourage these developments.

Where to Find It

Trinidadian and Jamaican origins (with their historical connections to sugar production) often show molasses and rum notes. Some Belizean beans also show this character.
