Soil notes evoke petrichor, the distinctive smell of rain on dry earth, alongside damp clay and the clean, mineral quality of freshly turned garden soil. In chocolate, this note grounds other flavors and connects the bar to its agricultural origin.
What Causes It
Geosmin, the compound responsible for the smell of rain on earth, appears in trace amounts in certain cacao. It is produced by soil bacteria (Streptomyces) that colonize cacao growing environments. This is purely a terroir expression: the soil composition and microbial ecosystem of the farm itself.
Where to Find It
Some Indonesian origins (particularly from Sulawesi) and Peruvian beans from certain regions show notable earthy/soil character.
