Wine notes in chocolate bridge acidic, fruity, and tannic: the dry tannins of red wine, the richness of grape must, or the slightly astringent quality of wine's finish. This makes the chocolate feel complex and grown-up, evoking a natural pairing with wine.
What Causes It
Polyphenols and tannins in cacao share a chemical family with those in red wine grapes. Highly fermented beans retain more of these compounds. The terroir overlap between fine cacao and fine wine regions is significant: both demand rich, well-drained soils and specific microclimates.
Where to Find It
Trinidadian and some Madagascan beans show this profile. Bars above 75% from tannic origins often push into wine territory.
Common Origins
Legendary origin. Porcelana and Sur del Lago Criollo are among the rarest and most prized beans in the world.
Complex Caribbean origin with earthy depth and unexpected fruit. One of the more characterful origins in the hemisphere.
