Cardamom bridges spice and floral: it has a bright, almost eucalyptus-like freshness alongside warm spice. In chocolate, cardamom notes give a bar an exotic, aromatic lift. Think chai tea or Scandinavian baking.
What Causes It
Cineole and other terpenes found in cardamom overlap with aroma compounds naturally present in some cacao varieties. This is primarily a terroir expression: cacao grown in biodiverse agroforestry systems with cardamom nearby can absorb some of those aromas.
Where to Find It
Some Guatemalan and Nicaraguan origins show cardamom notes. Indian cacao from Kerala can also show this character.
