Clove

Clove is a distinctive, intense spice note with a numbing quality, the same eugenol used in dental work. In chocolate it often appears with other warm spices as part of a complex spice profile. A little goes a long way; too much can dominate and feel medicinal.
What Causes It
Eugenol is present in cacao itself and is released and amplified during roasting. It is one of the most important aroma compounds in chocolate and contributes to the characteristic "chocolate spice" profile common to many dark bars.
Where to Find It
Many Indonesian and some Sri Lankan origins show clove character. Certain Madagascan bars also have a clove edge.
