Jasmine

Jasmine notes are heady, sweet, and slightly indolic, like the real flower at night. In chocolate, jasmine usually appears as a delicate background note rather than a dominant character. It pairs beautifully with citrus and bright fruit notes.
What Causes It
Indole and benzyl acetate compounds contribute jasmine character. These are associated with specific cacao genetics and terroir, particularly certain fine-flavor Trinitario and Nacional varieties. Fermentation temperature and duration influence how much of this character develops.
Where to Find It
Select Venezuelan and some Hawaiian origins have been noted for jasmine character. High-altitude Colombian and Peruvian beans can also show this note.
Common Origins
An emerging origin with genuine diversity. Highland lots from Huila and Sierra Nevada show excellent fruit and floral complexity.
