Côte d'Ivoire

The largest cacao producer in the world. Commodity-focused, but some fine-flavor cooperatives are emerging.

Flavor Profile

Varietals

ForasteroAmelonado

Fermentation

Variable. Large-scale commodity production uses heap fermentation with inconsistent timing. Fine-flavor cooperatives in the west of the country produce better-fermented lots with cleaner profiles.

Roasting

Similar to Ghana: robust Forastero that handles medium to medium-dark roasts well. Less complex than Ghana at the top end; more consistent across large volumes.

Maker Notes

Dominates industrial chocolate supply. For craft makers, seek out certified fine-flavor cooperatives rather than commodity lots. The earthy, malty character pairs well with dairy in milk chocolate applications.
