Fermentation

Variable and often challenging due to remote growing conditions. The best lots (Maralumi) have careful 6-day box fermentation. Off-lots can be over-fermented or uneven. Sourcing from a reliable importer is critical.

Roasting

Light to medium. The bright acidity is the defining character: roast conservatively (275-295°F) to preserve it. Over-roasting produces a generic result that wastes what makes PNG interesting.

Maker Notes

The funkiness (acetic/fermented notes) is a feature, not a bug, for the right application. High-percentage single-origin bars showcase it well. Some makers find it challenging to work with; the flavor is assertive and polarizing.
